Italian beef is thinly sliced roast beef that is cooked in it's own natural gravy with a mixture of Italian spices until it is extremely tender. It's then served on a roll made from either a long loaf of Italian or French bread.
They usually add some of the gravy to the roll to soften it and top it off with green peppers that have been fried in olive oil.
