Labor Day weekend several of us from the Eunuch Archive got together for the weekend for fun. The food was wonderful. I said I would make the pancakes on Sunday morning. Well they were a big success, and the recipe was given to those who attended. Several of them have made them and have asked me to share this with the rest of the group.

Enjoy.

Riverwind’s Pancakes

1 Cup Flour

1 Egg

1-Cup Buttermilk

Mix well

¼ teaspoon Salt

½ teaspoon Baking Soda

1-Tablespoon Sugar

Mix well

3 Tablespoons Vegetable Oil

Mix well

Best to let it set for about 30 minutes

Mix if batter is to thick add a little more Buttermilk

Bring your Electric Skillet to about 400 deg.

Makes about 16 3-inch pancakes.

Old family recipes are the best, my father made these and 4 strips of bacon for breakfast every day.

I can vouch for these and say they are heavenly. First real breakfast I've eaten in a long long time.

Well I made the Buttermilk pancakes for TheFraj and myself 2 times this past week, this morning I just made up some regular pancakes since I ran out of buttermilk, and I would have to agree with TheFraj that the buttermilk ones tasted better.
