Vinegar & Honey

As a kid I use to have a copy of Vermont Folk medicine that preaches everything can be prevented and cured with two teaspoons Apple cider vinegar and two teaspoons of honey in warm water.
Recently I bought a used copy for myself and one for my friend. It was as I remembered. One book came with a blue pamphlet about curing arthritis and the same vinegar/honey remedy.
I have raw, unfiltered honey and started with clear Apple cider vinegar but lately have used organic, with "mother" etc. Apple Cider Vinegar. I get up in the morning, late, and drink some 12 oz of water while warming up my 8 oz of water. After 2 minutes in the microwave I add the vinegar and honey.
It reminds me most of the SAMe feeling. And there I only use 200mg when feeling low. Usually a day or two suffices. Sometimes three days.
The Vinegar & Honey has a most similar effect of an improved mood and improved feeling of well being without feeling ever so "druggy" like a B Complex buzz.
Currently I am looking for "how to make my own apple cider vinegar" because apple juice is about to flood the market (if the gallon jugs break).
Will my raw, unfiltered apple juice turn to vinegar naturally or do I need to add some mother from my organic, raw stock?
Can I leave it in glass or must it be placed in some crock or whatever. At what temperature & light?
Of course I can look it up online but, I'd rather bug someone for information.
Please report your experiences should you try this Vermont Folk remedy. It works within hours.
Or what you know of it. I highly recommend it. Cheaper then SAMe.

Of course there are recipes online. One here (howtomakevinegar.com) for example. But it occurs to me that the recipe for vinegar is not all that much different from the recipe for wine. I find in my case that wine brightens my mood more than vinegar. May depend on how sour your disposition is to start with.

Since you're mixing vinegar with honey, I wonder whether mead (honey wine) might have a similar effect if allowed to turn to vinegar. Recipe here:

My mom, who has severe osteoarthritis, tried apple cider vinegar several years ago. It did not help her. I don't remember if she added honey. Maybe not.
Honey is much more than sugar, and it's been shown to have real nutritional and medical value. Manuka honey, imported from New Zealand, has been proven in hospital studies to expedite healing of wounds and burns.

A friend of mine just telephoned. He had the opposite effect from Apple Cider Vinegar & Honey then I did. He felt aged ten years and low energy from the experience for a day. He is usually into such efforts and really likes his IV chelation treatments over the years.
Has anyone else tried the recipe? I still find it effective for a pick me up that lasts longer then the honey or vinegar possibly could. As if they set up a physiological sequence of events.

Left to its own devices it will probably ferment and turn to vinegar on its own, but you are at the mercy of whatever flora floats by to start the processes. Safer and probably better flavor to add a little wine yeast and after first fermentation some unfiltered organic vinegar to be sure you have tasty beasties doing your bidding.
Normal room temp is ideal. Too hot or too cold can affect flavor. Crock stabilizes temp, which might make the beasties more comfortable, but they will work in anything.

As I remember you corn your own corn beef so I trust your suggestions. I think I have resolved to just buy the raw, unfiltered stuff I have now. Still considering it. Thanks again.
