I think the reason you're finding the olders less often in the new memberships and more youngers is that the olders who are going to be on here have been here for a while, had their surgeries, etc. The youngers are still coming online with it. So it takes a while to get them spooled up.
I've recently begun compiling a list of eunuchs (those I know who are or have verification through others I know who are that have met them) and the age tends to be older for those who have actually had some sort of genital "reduction". I'm strangely one of the younger ones in that list, and I'm in my mid-40's, and had the surgery in my mid-30's. My casual observation is that most have gone the route I have as far as their progression. When the Internet got rolling I was in my early to mid-20's, that's when I found the archive. At that point we had diverse new membership here as the Internet and the "Eunuch Boat" was exciting and new (you're welcome for that earworm). Now that we're established as an online community, I'd expect the new membership to skew younger as they make their progression similar to what I did. I would also expect the average age for getting surgery will continue to decline a bit. I'd expect our serious members to be as follows:
1. Signs up in late teens/early 20's as they are working through what it means to have this desire as an adult. IE no longer having Mama to tell them what to do.
2. Lurks/participates on the boards through their 20's into their early 30's.
3. Has Surgery to remove the bits they don't want in the mid-30's to early 40's.
4. Disappears after that or becomes a eunuch/penecomtized/nullo supporter (IE like me) after their surgery.
