Having been born and raised in Michigan, we did not know anything about grits until I left home when I was 16 and went to Florida.

In Mich, all we had was yellow corn meal which my folks made into corn meal mush to eat. If there was much left over, it was put in an old fashioned bread pan, let gel, then sliced, fried and eaten with syrup. And yes, we used bacon grease. There were many a day that the only thing I had to "butter" my bread with was bacon grease. Add a little salt and pepper and you had some good eatin'. Nowadays the doctors would pass out or have you committed as insane if you told them you liked bacon grease on bread or biscuits. Oh, well, fresh made sorghum is great on bisciuts and fried mush too.

Google it. It's a silly but fun book.

This is one source: http://www.amazon.com/Cooking-Jargon-Er ... 0898151899 (http://www.amazon.com/Cooking-Jargon-Er ... 0898151899)

I don't own a copy--probably know all the recipes and use them daily! 🙄

Can't find grits? Go to an Italian neighborhood and ask for polenta. As for pasties; look for peroshki (Russian, raised dough) or perogi (Polish, un-raised dough). Eat well! --FLO--

We need to remember that "white trash" is a slur. It is like the famour "N" word.
